Recipe To Use Up Leftover Cheerios

Here's a nice, frugal recipe to use up that last of those Cheerios in the bottom of the box. Frugal and healthy ~ each has 146 calories and only .5 grams of saturated fat. Originally posted on the Cheerios website, tested in my kitchen!

Note: I sprinkle Cheerios on the tops of mine before baking, just because I like the way it looks. :)

2 cups Cheerios toasted oats cereal
1 1/4 cups flour
1/2 cup brown sugar (packed)
1 teaspoon ground cinammon
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup applesauce
1/3 cup skim milk
2 tablespoons vegetable oil
1 egg or 1/4 cup fat-free liquid egg product

1. Heat oven to 400°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray.
2. Crush cereal. In large bowl, stir together cereal, flour, brown sugar, cinnamon, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
3. Bake 18 to 22 minutes or until golden brown.

There you have it! Cheerios muffins!
