Frugal Recipe For Today...

As I was rummaging through my refrigerator, trying to decide what we were going to eat for the rest of the week (I've been sick and haven't shown an interest in the last two days), I realized I have the ingredients for one of my favorite frugal dishes. I can usually make this recipe for under $5.00 when there's a sale, I have coupons, etc. but I calculated it at "normal" prices and came up with $5.64 for six servings. Still not bad at all. So, thought I'd share.

Here's the recipe for New England Style Pierogie Dinner:

You will need:

1 teaspoon Old Bay Seasoning
1/2 head green cabbage
2 ears corn, cut in thirds (I use one can of corn, drained or frozen when corn is out of season)
8 ounces lowfat kielbasa
1 1/2 tablespoons butter
1 (12 oz) box frozen pierogies (mini ones work well)
fresh parsley for garnish (optional)

A. Bring 1 cup water and the seasoning to a boil in a Dutch Oven.
B. Meanwhile, defrost pierogies in the microwave (about 2 minutes).
C. Add cabbage, corn, kielbasa and 1/2 tablespoons butter to Dutch Oven when water is boiling.
D. Cover and cook 10 minutes, turning ingredients once or twice to avoid sticking. Cabbage and corn should be tender.
E. Add pierogies and remaining tablespoons butter, toss to mix. Garnish with parsley.

This dish literally takes 15 minutes, start to finish. If you don't have any kielbasa, use turkey sausage to keep the recipe low in fat and in cost. Here's a pic I took of the finished recipe one of the times we had it (hobby of mine):
