Autumn is the perfect season to clean out all of those veggies that are edging past their prime. Whatever produce bit and pieces you have left, use them to make some scrumptious soups. It's ok if the veggies are slightly wilted, simply chop them and heat with a little olive oil until they're softened. Puree the veggie mixture in a blender or food processer if you wish. Add any meat you may have on hand (optional) and thin with some broth (your choice). Add any seasonings you see fit and serve with a hunk of bread. Perfect fall food that you created with food that you would have thrown away. The best part is the soup will be different every time!
