For wonderful, yummy, lowfat cupcakes, mix one box of cake mix with a 20 oz. can of your favorite fruit (I puree it a bit with my immersion blender). Do NOT drain the fruit! Fill muffin tins with liners, then bake at temperature suggested on the box (usually have to add a few minutes to the bake time - just keep checking with a toothpick and add a few minutes at a time). That's it. Seriously. I just made 18 cupcakes for $1.24. I used a reduced~sugar yellow cake mix with canned fruit cocktail. Give it a try!
