National Pickle Day

Who doesn't love pickles? They are so delicious! They come in many varieties and flavors. There's a pickle to fit anyone's tastes. Today is National Pickle Day and a time to celebrate the wonder finger food we call "pickles". Have you ever tried to make your own pickles? You don't need to know how to can or preserve, you can make them right in your refrigerator! Here's a simple, frugal recipe for pickles that has received rave reviews:

Refrigerator Pickles

6 cups sliced cucumbers
1 cup slicedonion
1 green pepper, chopped
1 cup vinegar
2 cup sugar
1 tablespoon salt
1 tablespoon celery seed

1. Heat vinegar, sugar, salt, and celery seed.
2. Pour over cucumbers, onions and green pepper (in a large jar or several small jars).
3. Store in refrigerator.
4. These will keep for many months.
